Seared Chicken Breast With Yuzu Soy Dressing Salad

Ingredients

• 2 chicken breasts
• 2 tbsp yuzu juice 
• 2 tbsp vinegar
• 2 tbsp vegetable oil
• 1 tbsp dashi stock
• 1 tbsp soy sauce
• pinch of salt & pepper
• salad greens 

How To Prepare

Wrap your chicken breasts in some cling film, then give them a good bashing with a rolling pin or similar, until they’re tenderized and evenly flattened.


Warm your griddle and spritz with some vegetable oil. Cook for around 10 minutes over a medium heat or until nicely seared and cooked through.


While your chicken is cooking, let’s make the dressing. Mix together the yuzu juice, vinegar, vegetable oil, diluted dashi stock, soy sauce, and salt and pepper.


Drizzle the dressing on your salad greens and top with the warm chicken breast.
