Ingredients
for the wasabi guacamole:
2 very ripe avocados
1 lime, juice thereof
2 tsp wasabi paste
1 tsp pickled ginger
1 garlic clove, crushed
pinch of sea salt
for the prawns
500 g of large king prawns
1 lime, zest thereof
1 tsp black pepper
How To Prepare
First up, combine the prawns, lime zest and black pepper in a bowl. Pop it in the fridge to marinade and then move onto the guacamole.
Half the avocado and scoop out the flesh, placing in a bowl with the rest of the ingredients. Mash vigorously with a fork until smooth and mixed.
Place a teaspoon full of wasabi guacamole into each ramen spoon. Delicately place one prawn on top of each spoon, as pictured. Garnish with coriander leaf and proudly parade them around on a silver platter.
