Ingredients
• 6 biscuits
• 1 tbsp honey
• 2 tbsp yuzu juice
• 120g cream cheese
• 3 tbsp granulated sugar
• 3 tbsp yogurt
• 200ml soy drink
• 10g gelatine
• fresh fruit or flavoured syrup
How To Prepare
Crush up your biscuits, then mix with the honey and yuzu juice. Firmly pack the mixture into the base of your cake tin.
Add the gelatine to 2 tbsp of water, then microwave for about 15-30 seconds to dissolve.
Mix together the cream cheese, sugar, yogurt and yuzu juice. Once well incorporated, stir-in the soy drink.
Stir in the gelatine to your mixture, then pour into the cake tin and leave to set in the fridge.
Top with fruit or syrup, serve and enjoy.
