Succulent Chicken Cooked in Coconut Milk

Ingredients

1 stalklemongrass, crushed
500 gchicken, cut into pieces
3kaffir lime leaves
2 tablespoonscorn oil
½ cupNESTLÉ Greek Yogurt Natural
1 cubeMAGGI® Chicken Stock Cube
1green chilli, halved
1tomato, cut into wedges
300 mlwater
1 stalklemongrass, thinly sliced
1 cmgalangal
2 clovesgarlic
1 cmginger
4candlenuts
6shallots
½ teaspoonwhite pepper
1 ½ teaspoonscoriander seeds


Preparation

1. Firstly, blend the lemongrass, galangal, garlic, ginger, candlenuts, shallots, white pepper and coriander seeds together.
2. Then, in a pot heat up the corn oil and fry the blended ingredients for 2 minutes or until it exudes a fragrant aroma.
3. Proceed to add in the chicken, the crushed lemongrass and kaffir lime leaves. Mix everything together.
4. Next, carefully add in the NESTLÉ Greek Yogurt Natural, MAGGI® Chicken Stock Cube, green chilli, tomato and water. Reduce the heat and let it simmer gently for 10 minutes.
5. Ladle into bowls while it’s still nice and hot. Enjoy!
