
Ingredients
2 cups plain flour1 tablespoon baking powder
1/4 teaspoon salt
3/4 teaspoon sugar
7g yeast
1 1/2 cup lukewarm water
Caramel Butterscotch Syrup
4 tablespoon caster sugar
2 tablespoon water
2 tablespoon butterscotch syrup
70g butter
Crumpets Batter
- Sift flour, baking powder and alt into a mixing bowl.
- Stir in sugar.
- Sprinkle yeast in a jug of lukewarm water.
- Give it a quick stir.
- Set aside for 5 minutes until bubbles form.
- Add yeast mixture to dry mix.
- Whisk until smooth.
- Heat up frying pan and place lightly greased egg rings in the pan.
- Fill up to 3/4 of the egg ring height.
- Cook on low heat for 10-12minutes
- Check for doneness when surface is filled with holes.
- Shake off egg rings and cook the other side for another 2 minutes.
- Repeat with remaining batter.
- Heat up a small saucepan, add sugar and water.
- Give it a gentle swirl. let the water-sugar mixture simmer on low heat until it changes to dark blonde (DO NOT STIR!!!!).
- Remove from heat.
- Add butter and butterscotch syrup.
- Whisk until smooth.
